Devin's low fat, high protein pancakes

INGREDIENTS:
- 1/2 cup oatmeal
- 1/4 cup no-fat cottage cheese
- 4-6 egg whites
- 1 teaspoon vanilla extract (not too much because they will be too strong)
- Optional extra:
1/4 teaspoon cinnamon
DIRECTIONS:
Blend the oatmeal in a blender until it's fairly cut up. Add cottage cheese, egg whites and vanilla extract and continue blending until the batter is smooth and watery.
Spray a nonstick pan with low fat cooking spray. Pour in batter and cook on medium heat until brown on both sides. Use fruit like blueberries, strawberries or my favorite applesauce, rather than maple syrup as toppings. Enjoy. |
